Once in a while I stumble upon a meal that is so yummy in appearance, I have to disengage my “Eating Healthy” rule and give into the joy of bacon or other unhealthy food. This week the food that enticed me was “Piggies in a Blanket,” purchased at the local Amish Market.
The sweet Amish lady at the counter told me to bake the piggies at 375 degrees for one hour. I did so, and my husband and I were really pleased with the taste. Even better, they were very inexpensive. I bought the piggies in a blanket premade, but they would be easy to put together. The inner layer is loose sausage shaped into a half sausage shape. The next layer is stuffing, packed tightly around the sausage and held in place with tightly wrapped bacon. I baked the piggies uncovered for an hour. They bacon got a little dark, and dried out a tad, so next time I will cover the pan for about a half hour, and uncover for the final half hour. The bacon keeps the inside moist. Delicious!

No, I live across the river in New Jersey. The Amish and Mennonites are driven over to their markets in South Jersey. It is only about ninety minutes from Lancaster.

And there are some of the Pennsylvania Dutch in the Reading market in Philadelphia selling their wares most days of the week, correct ?

I would think the green is parsley…one, at least in the picture, had more than the other. Oh my, the combination was delicious. Something new and especially good because they were inexpensive. Sometimes bacon disagrees with me…but this, slab bacon most likely, did not bother me at all.

Marilyn, I have seen Thanksgiving turkey stuffing recipes with sausage in them. I bet these would have a similar taste – except for the BACON. mmmmmmm

Kathy, those look delicious, even in their raw state and I can just imagine how tasty they were. I am assuming the sausage you spoke of is the regular chub breakfast sausage such as Jimmy Dean’s or Johnsonville? I may just give this a try in the near future.

They are delicious!! Used to get them all the time at an amish market in Mullica hill new jersey but moved to Florida and can’t get them anymore. I’ve been looking forever for the recipe. Thank you so much for putting this on here!

I know this post is old but I just bought these at the Amish Market in Bristol PA on the recommendation of a gentleman in line with me. I am looking for better cooking instructions than what I was given at the meat counter. Thank you!

I think to make sure the meat is cooked all the way through. I haven’t bought them again. I will have to try them once more.
